Ingredients (12)
- 2 zucchini, trimmed, thinly sliced
- 1 red capsicum, seeded, quartered
- 1 kumara, peeled, thinly sliced
- 4 beef fillet steaks, trimmed
- Mixed salad leaves, to serve
Chilli jam
- 400g can diced tomatoes
- 1/2 cup white wine vinegar
- 1/2 cup brown sugar
- 1 onion, chopped
- 1 garlic clove, crushed
- 2 tsp chilli, chopped
- 1 tsp ginger, grated
Method
- Step 1 To make the Chilli Jam, combine all ingredients in a saucepan. Bring to the boil. Reduce heat to low and simmer for 20-25 mins, until thick and jam-like. Remove from heat.
- Step 2 Meanwhile, place vegetables in a bowl. Spray with oil and toss well. Preheat a char-grill on high. Char-grill vegetables for 2-3 mins each side until tender. Transfer to a plate.
- Step 3 Sear steaks for 3-5 minutes each side until cooked to taste. Serve steak with chilli jam, char-grilled vegetables and salad.
