Ingredients (12)

  • 2 zucchini, trimmed, thinly sliced
  • 1 red capsicum, seeded, quartered
  • 1 kumara, peeled, thinly sliced
  • 4 beef fillet steaks, trimmed
  • Mixed salad leaves, to serve
  • Chilli jam

  • 400g can diced tomatoes
  • 1/2 cup white wine vinegar
  • 1/2 cup brown sugar
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 2 tsp chilli, chopped
  • 1 tsp ginger, grated

Method

  • Step 1 To make the Chilli Jam, combine all ingredients in a saucepan. Bring to the boil. Reduce heat to low and simmer for 20-25 mins, until thick and jam-like. Remove from heat.
  • Step 2 Meanwhile, place vegetables in a bowl. Spray with oil and toss well. Preheat a char-grill on high. Char-grill vegetables for 2-3 mins each side until tender. Transfer to a plate.
  • Step 3 Sear steaks for 3-5 minutes each side until cooked to taste. Serve steak with chilli jam, char-grilled vegetables and salad.
