Ingredients (8)
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, bruised
- 3 large strips lemon rind
- 2 fresh bay leaves
- Pinch of dried chilli flakes
- Pinch of ground allspice
- 150g whole green olives
- 150g whole kalamata olives
Method
- Step 1 Preheat oven to 180C/160C fan-forced.
- Step 2 Heat oil and garlic in a medium saucepan over medium-low heat for 2 minutes or until garlic just starts to turn golden. Add lemon rind, bay leaves, chilli flakes and allspice. Cook for 1 minute or until heated through. Remove from heat. Add olives. Stir to coat.
- Step 3 Place olive mixture in a small baking dish. Bake for 5 to 7 minutes or until the olives are heated through. Transfer to a serving bowl. Serve immediately (see notes).
