Ingredients (8)

  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, bruised
  • 3 large strips lemon rind
  • 2 fresh bay leaves
  • Pinch of dried chilli flakes
  • Pinch of ground allspice
  • 150g whole green olives
  • 150g whole kalamata olives

Method

  • Step 1 Preheat oven to 180C/160C fan-forced.
  • Step 2 Heat oil and garlic in a medium saucepan over medium-low heat for 2 minutes or until garlic just starts to turn golden. Add lemon rind, bay leaves, chilli flakes and allspice. Cook for 1 minute or until heated through. Remove from heat. Add olives. Stir to coat.
  • Step 3 Place olive mixture in a small baking dish. Bake for 5 to 7 minutes or until the olives are heated through. Transfer to a serving bowl. Serve immediately (see notes).
