How to fry bitter melon
1. Remove both ends of tender bitter melon, scoop out the inner flesh, wash and cut into thin slices.
2.Cut sliced bitter melon and marinate with salt for 15 minutes.
3. Cut the two vitex sticks into shreds, slice the ginger, slice the garlic, add black beans and Sichuan peppercorns and set aside.
4. Squeeze the pickled bitter melon slices to dry the water.
5. Squeeze out the water from the bitter melon slices and shake them loose.
6.Put cooked rapeseed oil in a pot, heat it up, and stir-fry shredded chili peppers.
7. Add ginger slices, garlic slices, tempeh, pepper, stir-fry
8.Put the bitter melon slices squeezed out and stir-fry over high heat for two minutes until cooked.
9. Remove from the pot and serve.
